Creative Refrigerator Pickles

In this online class, we will work from our home kitchens via Zoom to make two kinds of refrigerator pickles. Refrigerator pickles do not require canning or special equipment, and they stay crisp for months! This class will cover a basic refrigerator pickling method that can be customized to any vegetable or flavor profile you like. You will get hands-on practice live with the instructor while you prepare your pickles at home. You will leave the class understanding how to safely pickle almost anything quickly and easily, and the skills to turn your fridge into a treasure trove of pickled delights.
Consider buying fresh produce at the La Grande Farmers Market to use in class! Freshly harvested foods make the tastiest (and crunchiest) pickles!
Please note: Participants are responsible for all supplies, including a device that is compatible with Zoom that you can have with you in your workspace (hands-free). See the full equipment and ingredient list below. The class handout and other resources will be shared via email the morning before class. Bring your questions about pickling, a sense of adventure, and a willingness to give thoughtful feedback – all participants will be asked to fill out an evaluation to help ACE develop other online classes.

Supply List:

White Wine or Apple Cider Vinegar with at least 5% acidity (have a quart or more on hand)
Salt
Sugar or honey
Carrots (One bunch – I recommend freshly harvested small carrots from the farmers market, as you will be able to fit several whole carrots in a jar. Avoid bagged “baby” carrots from the grocery store)
Cauliflower (one small head is sufficient) or, if you aren’t a cauliflower fan, green beans or pickling cucumbers could be substituted
Yellow onion (one medium or larger)
Garlic
Fresh rosemary, oregano, tarragon, or dill (your choice! 2 sprigs)
Fresh ginger (1-inch segment is plenty)
Spices (we will need a tablespoon or less of the following – Nature’s Pantry bulk section is a good source of spices at an affordable price because you can buy just what you need):
Whole coriander seed
Whole yellow mustard seed
Whole peppercorns
Whole cloves or allspice
Ground Turmeric
Chile flakes (optional)
Equipment:
Two clean pint jars with lids (does not have to be a sealable canning lid)
Cutting board
Knife
Vegetable peeler
Mixing bowl
Measuring cups / spoons
Medium saucepan

Registration cancellations & transfers must be made through Art Center East at (541) 624-2800 48 hours or more before the class start time. We cannot issue refunds or transfers for cancellations received after the 48-hour cutoff. Exceptions will be considered for medical or family emergencies. ACE will honor a refund, minus a $10 administration fee when the cancellation is made 48 hours or more before class start date. When a class is canceled due to low enrollment, we will issue a refund for all registration fees. ACE will contact you in the event of a cancellation. Face coverings will be required in accordance with statewide regulations current at the time.
